WHAT DICK HAS TO SAY:
You know, I’m more of a chardonnay man myself, but I have to this is pretty bloody good!
A typical Sauvignon Blanc medley of gooseberry, tropical fruits with a hint of capsicum. On the palate, ripe flavours are balanced by a lovely mouthfilling fresh fruit intensity and long persistent finish. WINEMAKER - ROD MCDONALD
The 2008 vintage was a slightly cooler and longer season than average. The fruit for this wine comes from the Wairau Valley of Marlborough. Timely canopy management activities such as shoot thinning and leaf plucking along with an attention to vine health ensured clean, ripe fruit at harvest. The fruit was harvested in the cool of the night to ensure it arrived at the winery in pristine condition.
Machine harvested fruit was carefully pressed immediately following picking and was settling in tank within 6 hours of being picked. The juice was cool settled for clarity then racked to a fermentation tank where it was fermented at around 12 degrees. Cool ferment temperatures during ferment ensure the fruit intensity prized in Marlborough Sauvignon Blanc is preserved. Following ferment, the wine was rested on yeast lees for winter before the wine was lightly fined and filtered before bottling in the summer of 2009.
